Kimchi Bibim Guksu is my go-to dish for a quick and easy weekend lunch. Although I’ve been enjoying the trend of bibimmyeon lately, I couldn’t resist the nostalgic craving for a classic pairing: Kimchi Bibim Guksu and crispy pork cutlet, also known as Donkatsu! This delightful combination is perfect for a hassle-free meal on lazy weekends.
For a change, I also love indulging in the perfect harmony of Kimchi Bibim Guksu with grilled pork belly. The spicy kick from the kimchi sauce complements the succulent slices of pork belly, creating a symphony of flavors that’s hard to resist.
Recipe(for 1 person):
Ingredients:
- Korean noodles(called Somyeon)
- Kimchi (finely chopped) 1 paper cup
- Cucumber (choosable)
- Onion (thinly sliced)
- Soy sauce 1 spoon
- Gochujang (Korean red chili paste) 1 spoon
- Sugar 1 spoon
- Sesame oil 1 spoon
- Sesame seeds 1 spoon
- Red pepper powder 0.5 – 1 spoon
Instructions:
- Cook the Noodles: Boil the noodles in water until cooked. Rinse them under cold water and set aside.
- Prepare the Kimchi: It tastes better with ripe kimchi. Cut the kimchi into small pieces with scissors.
- Prepare the Vegetables: Julienne or finely chop the carrot, cucumber, and onion. You can add more vegetables you want, such as cabbage.
- Create the Bibim Guksu Sauce: In a separate bowl, mix soy sauce , gochujang , sugar, sesame oil, sesame seeds , and red pepper powder.
- Combine Noodles and Sauce: Mix the cooked noodles with the kimchi sauce and add the prepared vegetables. Toss everything together until well coated.
- Final Touch: Serve in a bowl and sprinkle with sesame seeds.
